Say a final goodbye to brown bags and plastic zip-locks. Mason jars are an eco-friendly, portable option when it comes to packaging the latest (and tastiest!) food trends. These mini meals take only a matter of minutes to prepare and can be stored in the fridge for several days. For those who are crunched for time but craving a breakfast or lunch more creative than a protein bar, check out the following recipes:

1. Overnight Oats

Cold, uncooked concoctions are a tasty alternative to oatmeal. The night before a busy morning, fill a mason jar or similar container halfway with rolled oats. Add equal parts yogurt and milk of any variety—almond, soy, and coconut milk are fantastic substitutions for dairy. Customize the flavor with vanilla extract, chia seeds, a pinch of cinnamon, or a spoonful of peanut butter. While you sleep, the oats will absorb the liquid and appear soft and moist by sunrise. Top with slices of berries or banana, jelly, crunchy granola, or chocolate chips. Protein powder can be stirred in for an extra boost.

2. Breakfast Parfait

For long-lasting energy, alternate portions of yogurt, fresh or frozen fruit, and cereal. Top with granola, extra cereal, or a drizzle of honey.

3. Caprese Salad

Combine mixed greens, cherry tomatoes, mozzarella slices, and basil in a jar. Drizzle two parts olive oil and one part vinegar over the salad as dressing, and shake to mix the ingredients together. Add salt and pepper to taste.

4. Burrito Bowl

When you don’t have time to run to Chipotle—prepare an equally delicious meal without leaving the house! Pack the bottom of a jar with rice or quinoa. Layer black or pinto beans, lettuce, corn,  chicken or steak, and avocado until only 1/4 of the jar is available. Shake to mix, and garnish with sour cream (or greek yogurt for a healthier option), guacamole, and salsa.
